Ok ya'll, this is one of my favorite breakfasts to make! It's so easy and loaded with nutrients, like choline. For women with PCOS, choline is essential for converting estrogen inside the liver. For those who struggle with estrogen dominance, having a healthy level of choline in the body can help regulate estrogen levels by supporting liver function.

You can add onion or tomato for more flavor. This is best enjoyed immediately, but don't worry there won't be any leftovers anyway!

 1 Egg
 ½ tsp Extra Virgin Olive Oil
 2 Garlic, cloves, sliced
 ½ tsp Chili Flakes
 1 ⅓ cups Baby Spinach
  tsp Sea Salt, to taste
 1 ¾ oz Sourdough Bread, toasted

Bring a pot of water to a boil. Once boiling, reduce the heat slightly and add the egg. Cook for 6 1/2 minutes for a soft-boiled egg. Once the egg is done, add to a bowl of ice water and set aside.

Meanwhile, heat the oil in a skillet over medium heat. Add garlic and chili flakes and sauté for a minute. Add spinach and cook for two to three minutes or until soft. Season with salt and pepper.

Add the spinach to the toast. Peel the egg, slice it in half, and place it on top of the spinach. Enjoy!
